| Filo Samosas Print This Recipe Ingredients 1 cup potatoes, peeled and finely chopped 1 tsp. vegetable oil 1 onion finely chopped 2 tsp. curry powder 2 tsp. cumin 1 tsp. turmeric 1/2 tsp. salt pinch of cayenne pepper 1/2 to 1 pound lean ground beef, or substitute 1/2 cup small frozen peas 3 tbsp. beef broth 1 tbsp. currants 1 tbsp. lemon juice 2 tsp. honey 16 sheets of filo 1/2 cup butter, melted Directions Boil potatoes until tender; drain and set aside. In a nonstick pan, heat oil at medium and cook the onion, stirring until softened. Add all spices. Stir and cook for 2 minutes. Add meat, crumbling it into small pieces. Cook thoroughly. Stir in potatoes, peas, beef broth, currants, lemon juice and honey. Cook, stirring gently, until peas are thawed. Cool. Place one sheet of filo on work surface. Lightly brush with butter. Repeat with second full sheet. Butter. Add filling, then roll into large triangles or rounds. Bake at 350 for 30 - 40 minutes. |
